I am out here in Prince Edward County with the family this week and we are lovin’ it! We have never been to this part of Ontario although we have passed by it countless times the last 10+ years traveling from Toronto to Montreal which is where hubby and I grew up.
The area is beautiful with many farms, vineyards and beautiful sand beaches. We are already talking about our next stay in the area.
We arrived a couple of days ago and our first stop was one of the many veggie and fruit markets/stands that we spotted along the roads of the county. The produce is fresh and much cheaper than anything we can find at our grocery stores or farmers markets in the city. So when I saw huge deep green Romaine lettuce for $1 all that came to mind was Caesar salad. Here is a recipe for an easy creamy Caesar dressing that will not disappoint.
- 1 teaspoon anchovy paste
- 2 tablespoons fresh lemon juice
- 1 large garlic clove, grated or crushed
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- ¾ cup mayonnaise
- ¼ cup olive oil
- ⅓ cup Parmesan
- Salt and pepper
- In a large bowl, whisk anchovy, lemon juice, garlic, mustard and Worcestershire sauce until well combined.
- Add in the mayo and olive oil and Parmesan and mix well. Taste the dressing and add salt and pepper as needed.
