Corn and Black Bean Salad

- 3 cups frozen corn kernels thawed
- 1 can black beans, drained and rinsed
- 1 large red pepper diced
- 4 scallions sliced
- ¼ cup cilantro chopped
- 3 tablespoons fresh lime juice
- ½ cup olive oil
- ½ teaspoon cumin
- ⅛ teaspoon garlic powder
- Salt and pepper
- In a large bowl, make the dressing by combining the lime juice, olive oil, cumin, garlic powder and salt/pepper.
- In the same bowl, add the corn, beans, pepper, scallions and cilantro. Mix well. Enjoy!
