Peas and Mint

Ingredients
  • 85 grams bacon (about 3 slices), cut into thin strips
  • 2 cups frozen peas, thawed or fresh and cooked peas
  • 2 spring onions, chopped
  • 1 tablespoon mint plus more for serving, chopped
  • ½ cup vegetable or chicken stock
Instructions
  1. In a medium skillet and over medium to low heat, cook the bacon till fat has rendered and bacon is crispy. Remove the bacon with a slotted spoon and place on a plate lined with paper towels. Set aside.
  2. In the same pan and with two tablespoons of the bacon fat (if you don't have enough bacon fat just add some olive oil), add the onions, peas, mint and stock. Cook for a few minutes till liquid is reduced. Season with salt and pepper to taste.
  3. To serve, sprinkle with bacon and some mint. Serve warm.
