1 head of cauliflower, cut into medium-sized florets
1 large onion (or shallots)
3 garlic cloves
⅓ cup parsley leaves, roughly chopped
¼ cup chives, chopped
1 tablespoon butter
1 tablespoon olive oil
¾ cup mild white cheese (such as light cheddar, mozzarella...), grated
¼ cup Parmesan cheese, finely grated
½ cup bread crumbs
½ cup Panko bread crumbs
2 eggs, beaten
Salt and pepper
1 cup all-purpose flour
Vegetable oil for frying
Instructions
Bring a large pot of water to a boil. Add the cauliflower florets and cook for 10 minutes. Drain and chop finely or mash with a fork and let it cool.
In a food processor, finely chop the onion, garlic, parsley and chives.
Heat the olive oil and butter over medium heat in a large pan. Add the mixture from the food processor and cook for 2 minutes. Add the cauliflower, season with salt and pepper and cook for one more minute. Let the mixture cool.
Add cheeses, bread crumbs (including Panko) and eggs and mix to combine.
Form small patties (~1/2 inch thick and 2-3 inches wide), dredge in the flour, shake off excess flour and fry over medium-high heat flipping once until golden brown on both sides. Place cooked patties on a plate lined with paper towels. Serve warm.
