I should have researched drink recipes long ago. I would have really appreciated this light, tasty and refreshing drink when I was very pregnant in the hot summer of 2010!
One thing to remember is that the raspberry syrup must be made in advance. The syrup does keep well in the fridge for at least a week.
What I love is that you can easily adjust this recipe to your taste (including adding some rum). So use this recipe as a guideline but feel free to change up the amount of syrup, water or mint.

Ingredients
- *** FOR RASPBERRY SYRUP
- 1 cup sugar
- 1 cup water
- 2 cups fresh raspberries
- *** FOR THE DRINK
- ½ lime
- 2 sprigs of fresh mint
- 1.5 ounces raspberry syrup
- 5 ounces sparkling water
- 4 or 5 fresh raspberries (optional)
- Ice
Instructions
- For the syrup - Put the water and the sugar in a small saucepan over medium heat and stir till the sugar is dissolved and the liquid is clear. Meanwhile, put the raspberries in a Mason jar and pour the syrup on top. Let it cool and then cover, shake and put it in the fridge overnight.
- For the drink - In a tall glass (or a Mason jar), place half a lime and the leaves of one and a half sprigs of mint. Crush the lime and mint to release the juices with the back of a large wooden spoon. Add the syrup, sparkling water, remaining mint leaves and fresh raspberries and stir. Top with ice and serve!
