Rustic Smashed Potatoes with Leeks

Ingredients
- 4 tablespoons butter, divided
- 2 tablespoons olive oil
- 4 large yellow flesh potatoes, peeled and cut into quarters
- 3 leeks, white parts only, sliced
- 1 teaspoon thyme leaves
- Salt and pepper to taste
Instructions
- In a pot of boiling water, cook the potatoes till fork tender, about 15 to 20 minutes.
- While the potatoes cook, heat two tablespoons of butter and the olive oil over medium heat in a large skillet. Add the leeks and cook for a couple of minutes. Add the thyme and salt and pepper and cook till the leeks are soft and start to brown. Set aside.
- Once the potatoes are cooked, drain and return to the pot. Over medium heat, cook the potatoes to remove any moisture (about a minute) and roughly mash them with a potato masher - remember to leave some large chunks.
- Add the leek mixture, remaining butter and salt and pepper to the potatoes. Mix well and serve warm.
